Chicken Enchilada Casserole
16 oz. Cheddar Cheese shredded
16 oz. bag of frozen chicken cubes
2 or 3 stalks of celery
1 whole onion diced
1 tsp. Olive oil
Parsley, salt, pepper, garlic (any kind will do), and green chile powder if you have it. Just add to taste.
Cook onions, celery, olive oil and spices together. Add chicken and a few tablespoons of water once celery and onions are almost done. Cook covered until chicken is heated up. If you like spicy hot, add ½ cup of Private Selections Green Chile Salsa from Smith’s once chicken is heated up.
Set aside.
Spread sour cream on tortillas, putting them sour cream side down in bottom of pan then spread more on top side. Fit them together, if you have to cut them that’s fine.
Next put layer of chicken mix, shredded cheddar cheese, then another layer of tortillas. The last layer is just chicken and cheese.
Bake it covered with foil for 40 minutes, then take off foil and bake another 10 minutes. Let it stand 10 minutes at least before cutting into it.
Sorry I don’t use exact measurements on recipes. I just don’t cook that way. But if you have any questions feel free to ask.

This is the side shed all cleaned up. Before this there were roosting boxes and chicken shit all over, and perches for them. My daughter took the perches out and the boxes.
Wow, seems like a really long time since I’ve posted. I have spent the past few days working on my sheds. I didn’t get before pictures but just imagine a shed with a very dusty floor, a table full of tools along with various screws and nails, pieces of scrap wood layin’ around, a drill, MY Dremel, and all coated in dust. Then over to the next desk is my jewelry making desk, again tools, sand paper, and random shit all covered in dust, then over to the other side, a shelf with mostly soon to be trash on most of the shelves, then the big ol’ bbq grill, taking up all kinds of room and covered with a sheet that was covered in dust. And the last corner ya, full of gardening tools.
So day 1- half the day was spent discussing how to tackle the mess and what the end result would be. Had to wait for it to cool down outside to do anything but once it cooled we got the side shed which was the chicken coop all cleaned out and hosed down with some of my saved up rain water. Left it to dry over night.

How I hung my shovels, on the old perch and some scraps of 2x4's. Am I brilliant or what? I know it's not the best look but it was already there and it worked. It's functional, I'm just happy the shovels and rakes aren't all thrown into the corner.
Day 2- Was up at 5:30 ready to take on the rest, but didn’t get started till 7, but worked our tails off till almost noon. So we took a lunch break, got cleaned up to get some stuff at the hardware store since we had to go get my son anyway. Came home and ate a burger for dinner and got the rest of the shed cleaned out. It was a lot of work and I have a ton of cool ideas for it. I think it will be the coolest crafting shed ever. I decided to put all of my crafting crap out there. Make it into a crafting room. Which in the long will clear out the house of a lot of clutter. I thought about making it into a place for all my music stuff, but I hate to admit it, but I would need more room for that stuff.

Here is most of the room I will have. It's all cleaned out. Still a lot of work ahead, but it will be very rewarding to have the space. I can't say I dig the rug, but it's better than concrete.
So, now the side shed is complete. I am very pleased with it. But it even still needs some work. It’s not completely sealed, but I think the most that could get in now is more dust. I made my own concrete from dirt, chicken poop, wood shavings from the chicken coop and some water, crammed the mixture into the gaps down on the floor. It’s got metal siding and it’s got openings at the top and bottom because of the bends in it. Hopefully nothing will dig it’s way through, because I really hate cleaning up mouse traps.
The loft was full of junk too. Under the loft was my desk for making jewelry. And that shelf was under the loft. It’s now in the side shed. And Lexi donated her rug. It’s a few years old, but will work for now.
Ya, I think we are ready for the next step. Which I am keeping to myself. But it should be interesting when it’s done. I see a clean room where I can go and create.
Forgive my writing tonight. It’s been quite the day. I think I will have to rest tomorrow, because my back is not happy at all tonight. I don’t know why but it also seems like a very long time since I have written an actual blog post. But I had to get it down before I forgot some of this stuff.
And some random pictures, of stuff I plan to post to craigslist soon.

- An old film projector. I know it works but all the films I had were too dried out and just kept breaking. Not sure what it’s worth in dollars, but sentimentally I watched Bambi on it when I was a kid, that was pretty cool. So make me an offer.

It's a, a, um, well, you know. It's old too. I assume it still works. Would be nice to get something for it. Any takers?

New designs, freehand. I think I really like this stuff. But I need to practice more. Any volunteers? Sorry the pictures are so crappy. Taking them with a phone camera.

The one on my wrist didn’t turn out dark at all. I didn’t keep it covered while I slept. So a lot of it came off. Yes, in my bed.
I know yuck. But I will clean it all up today. On the bright side my wrist doesn’t hurt this morning like it did yesterday.
